Change Keyboard Controls

I just decided to go with Mame32 today and I am not liking the keyboard set-up at all. I can't find an option to set keys either so I'm assuming the only way to change the contols is through a cfg. Can someone please tell me how to change the controls?

 

Also where can I find a list of non-game controls in Mame32?

Now for my next question on the list:

 

Is there a way to allow me to sample the audio tracks (like in kawaks by pressing + or -) and is there an easy way to rip the audio.
