I'd have to go for Yu Suzuki ( Outrun, F355, Shenmue) and of course Miyamoto.

Hdeo Kojima for his vision with Metal Gear.

I beleive the future rising star to be Toshihiro Nagoshi for Super Monkey Ball and the latest F Zero.

It's Lord British. For those that don't know, his real name is Richard Garriot and he is the brainchild behind the Ultima games which are some of the best RPGs ever.

Since pretty much anyone else I would mention has been covered:

 

Whoever did the recent incarnation of the Elder Scrolls world (Morrowind). Also, whoever did the first level of Thief: The Dark Project. Screw everyone else who worked on that game.
